Is there anything better in life than sushi? The delicious fresh cuts of fish mixed with the unique texture of rice? There is if it is prepared by sushi extraordinaire Jiro Ono. JIRO DREAMS OF SUSHI tells the remarkable tale of this dedicated chef who has perfected his art to such an extent that he is now world renowned despite the simplicity of his dishes. Jiro Ono owns a 10 seat restaurant in a Tokyo subway station, which isn’t exactly the kind of place you would expect to find a 3-Star Michelin restaurant. The waiting list is ridiculously long, but the food exquisite.

Within minutes of the film starting you will be swept away with Jiro’s unstoppable quest for perfection. How unstoppable you ask? Every aspect of his sushi must be done in a specific way, with even the rice having to pass rigorous standards. As his honourable staff, which includes his eldest son, train tirelessly in the back, Jiro directs a concerto of sublime tastes. As soon as the sushi is placed down it is expected to be eaten. Jiro makes smaller portions for women, because the meal must follow a strict pace. If you are left-handed, Jiro will notice this and place future portions on your left hand side.

Despite his apparent obsessive search for flawlessness, Jiro is also a wonderfully kind and very funny man. He has a grand relationship with his eldest son, which is beautifully represented as they recount their lives together. We also see other sides to Jiro, such as his visit to see some childhood friends. He asks one woman “How are you?” to which her response is “Good. We are still alive.” These humorous moments indicate that Jiro may be a diligent worker, but he hasn’t lost sight of what is important in life.

The film also takes time to look at the effects of mass fishing, and how Tuna are no longer allowed to mature. JIRO DREAMS OF SUSHI is an inspirational documentary which doesn’t try to convince you of anything. No one can undermine this man’s achievements, nor criticise his practises. Everything you need to know is apparent in the actions of those involved.

Like the sushi itself, this film is assembled delicately and with patience. The taste is subtle, but very noticeable.
